The 00 flours we use made from wheat are uniquely smooth and slightly higher in natural sugars, allowing the yeast to release the perfect amount of air into the dough during the proofing and baking process.
Speaking of yeast, we only use the very finest of Italian yeast, some starting with cultures older than us. The very specifics of the yeast is a closely guarded secret, but when you taste a Buon Forno pizza, you’ll find out why we keep it to ourselves
Our doughs are meticulously prepared using; flours that are always stone-milled with Italy’s purest waters, selected yeasts, Sicilian sea salt and extra virgin olive oil. The fermentation process is slow, in fact extremely slow!


These pizzas are processed using genuine artisan methods: the stretching of the dough and the topping of the pizzas are both carried out exclusively by hand by expert pizza chefs, mostly by women, considered to have smaller and more agile hands.
This is the only way of ensuring that the molecular structure of the dough does not undergo the trauma of an automated production process, thus enabling us to guarantee extremely high-quality standards.
Important also to note that our pizzas are always baked in a stone oven with free flames.
Buon Forno offers two styles of Pizza – Traditional Classic Thin base made with just a touch of olive oil and high-crust Neapolitan Style made according to tradition with just 00 flour, pure water, sea-salt and yeast.
Buon Forno also offers Pinsa – the exclusive flours mix and enhanced hydration, make our premium pinsa dough light and fragrant, with a crunchy outside but soft and leavened inside.
